Paleo Pumpkin Pie Smoothie (dairy and egg free) –
Many of my readers write and ask me for egg free desserts and breakfasts that fit into a Paleo diet. This is a great smoothie for summer time that can be made with canned or boxed pumpkin. I keep pumpkin on hand all year for baking and cooking. Of course pumpkin is higher in nutrients when it is fresh so eat as much as you can during the fall. Paleo Pumpkin Pie Smoothie (dairy and egg free)
Serves 2
Ingredients:
1 cup full fat coconut milk
1 13 oz can organic pumpkin
1 teaspoon organic cinnamon
1/2 tsp stevia powder extract or 2 tbsp honey
2-3 cups ice cubes
2 tablespoons hydrosolate gelatin (this one does not gel)
2 tablespoons ground golden flax
1 teaspoon cinnamon
1/2 cup water
Directions: Place all the ingredients into the blender, except water, and pulse until smooth. If the smoothie is a little thick add the water and pulse again until well combined. Pour in two cups, serve and enjoy.

I make one very similar – but I use cinnamon, ginger and nutmeg, and liquid stevia, with no gelatin. (I need to start adding gelatin to our smoothies!) It’s my husband’s favorite smoothie, even though pumpkin pie has never been a favorite of his. Oh – sometimes I’ll add an avocado, too.
