I made these cookies for a small party I had at my house. People ate them so quickly and liked the taste. I made them with a granulated sweetener that my sister likes because she is doing a ketogenic diet called Swerve. I don’t know that much about it but I think it is healthier than aspartame or sucralose. It comes from natural sources anyway.
I have studied birch Xylitol more thoroughly and think it is a pretty good option but can cause some tummy issues if eaten in excess. Feel free to make them from organic sugar or coconut sugar if you prefer. I was so happy to have something that everyone could eat at the party. Even my chef husband loved these cookies because he is also doing keto. Try his diet here.
Paleo and Low Carb Snickerdoodle Recipe (gluten free and grain free)
Prep Time: 15 minutes
Cook Time: 20 minutes
Yields: 24 cookies
1 cup almond flour (Learn to make your own here or buy it HERE)
2/3 cup coconut flour (where to buy coconut flour)
3 tablespoons ground flax seeds (order here)
1/4 teaspoons sea salt (order here)
1/2 teaspoons baking soda (order here)
1/2 cup granulated maple sugar (order here ) (or 1/2 cup Swerve or birch xylitol or 1 teaspoon stevia extract for low carb)
1 teaspoons cinnamon, plus 1/4 cup for decoration (non-irradiated like this)
1/2 teaspoon ground nutmeg
4 eggs (get pastured eggs here)
1/2 cup coconut oil, melted (where to buy coconut oil)
Preheat the oven to 350 degrees and prepare 2 cookie sheets with parchment paper. Place the dry ingredients in a bowl and mix. Place the coconut oil and eggs in another bowl and mix well. Pour the wet ingredients into the dry and mix until well combined. Place the extra cinnamon onto a plate and roll each cookie through the spice until coated. Place the cookie on the the prepared pan and press down into a circle shape. Repeat until all dough coated and pressed. Place in the oven and bake for 15 minutes or until done. Let the cookies cool on a baking rack for 10 minutes. Serve and enjoy.
