I gave these No Bake Egg Free Paleo Pumpkin Muffins a shot and they were pretty good. No, they were exactly like real muffins but they were fun a change of pace. They are kind of like a to-go pannacotta, if you will, which was fine by me since I live for pudding. I think kids would love them because they are small and hand held. Let me know what you think.

No Bake Egg Free Paleo Pumpkin Muffins
Serves 1-2
Ingredients:
1 can organic Pumpkin
1 cup coconut milk, full fat (this one has no BPA or guar gum!)
Or grass fed raw milk if tolerated
1 tsp cinnamon
1 pinch sea salt
1/4 cup coconut flour
1/2 tsp baking soda
1 tsp rose water or lemon juice
3 Tbsp of gelatin (I like this one because it is from grass fed cows)
3/4 cup water
Directions:
Mix the cinnamon, salt, coconut flour and the baking powder in a small bowl.
Heat up a sauce pan over medium heat.
Add the pumpkin and the coconut milk, stir for 2 minutes.
Add the coconut flour, salt and cinnamon.
Add the rose water and sweetener and stir a little more.
Dissolve the gelatin in 3/4 cup of water then mix it into the pumpkin mixture.
Mix it until everything is well combined.
Add a little bit of water if it looks too thick.
Remove from the heat and spoon the mixture into muffin cups.
I used these silicone ones.
Put it in the freezer /fridge for a 15-20 minutes until it hardens up.
Serve and enjoy!
Grass Fed Girl Tip:
For a change of pace add some nuts or seeds! These would probably also be good with chocolate added to them!

How can I make this without any coconut milk and no fruit? I can’t have fruit,dairy,nuts,soy on a candida diet.I only eat meat and certain veggies and fats! I do have coconut oil and palm oil…

I don’t see why you cant have coconut milk, it is not a nut. It is just a fat.Pumpkin is fine on a candida diet. Which one are you doing? Candida needs a lot of specific herbal supplements to die off. Diet alone is usually not enough.None of these foods feed candida, even honey is ok.

sorry so many comments keep forgetting stuff.
I like whole eggs and I have Beef gelatin. IF I just use an egg beef gelatin some seasoning(watever kind I want I like cayenne 🙂 please tell me how to adjust the recipe. I hear people use cauliflower as a rice/pasta substitute how about that or jicama instead of flour?
* I can’t open my last can of my favorite pumpkin(have to order online) until I know the recipe will work..
ALso what cupcake things are you useing? I don’t have cup cake things can you post links? also If I were to just use a small round shallow pan instead of cupcake dish that would work?
