Low Carb and Paleo Chocolate Chip Cookie Recipe -
Low-Carb, Gluten-Free, Paleo, Vegetarian, Dairy-Free, Contains Nuts
Cooking with coconut flour is a real challenge and I made these cookies 5 times before I got them right! Almond flour is much more forgiving for gluten-free baking but I wanted a mixture that would create the right texture. I had many happy taste testers with this recipe so I hope you enjoy it!
Low Carb and Paleo Chocolate Chip Cookie Recipe
Prep time: 10 minutes Cooking time: 12-15 minutes Serves: 18 cookies Ingredients
- 3 eggs
- 1⁄2 cup palm shortening or softened butter
- 1 teaspoon vanilla extract
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 3⁄4 cup birch xylitol or 2 teaspoon stevia powder extract
- (Or 3/4 cup coconut sugar for Paleo)
- 1⁄3 cup coconut flour
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon sea salt
- 1 cup almond meal
- 4 ounces unsweetened dark chocolate, chopped
Preparation and Instructions
- Preheat the oven to 350° F.
- Mix the eggs, palm shortening or butter, vanilla, cinnamon, nutmeg, and sweetener in a large bowl.
- Sift the coconut flour into a small bowl then add the baking soda, salt, and almond flour.
- Combine the two mixtures and add the chocolate chunks.
- Place parchment paper on cookie sheets.
- Spoon the dough on the cookie sheet in 1-inch mounds.
- Bake for 15-17 minutes until browned.
Serves 18; Per Serving: 148 Calories; 11.8g Fat (106 calories from fat); 41mg Cholesterol; 100mg Sodium; 2.7g Protein; 7.5g Carbohydrate; 1.9g Dietary Fiber; 5.6g Usable Carbs.
