This meal is like a warm hug after a long day. You can make these ahead of time and and just pop them in the sauce at the last minute or you can leave them simmering in your crock pot.  Ingredients:
         1 lb 100% grass fed beef
         2 cloves garlic chopped finely
         ¼ cup fresh chopped parsley
         Pepper
         1 egg
         1 tbsp Organic Coconut Flour
         Real Salt to taste
Directions:
Place all ingredients in a bowl and combine well with hands. Form into 1 inch balls and place on the side.
Sauce Ingredients:
4 chopped organic tomatoesÂ
2 tbsp organic paste
1 chopped shallot
1 clove garlic
1 tsp Grassfed Organic Ghee
2 tbsp fresh basil
Real Salt and pepper to taste
Directions:
Saute onion and garlic together in the Ghee until soft. Then add the tomatoes and paste and cover for 10 minutes. Then uncover and simmer for 5 more minutes until the sauce is getting thicker. Once the sauce has a good consistency, add the meatballs carefully. Simmer in the sauce for 15 min on medium with the lid on the pan. Season with salt, pepper and chopped basil. The meatballs should be tender and moist. You can serve with sauteed zucchini or baked spaghetti squash and top with more fresh herbs. Â If you can tolerate raw Italian Parmesan cheese, you can sprinkle some on top when serving.
