My Grandma is 90 years old and still cooks everyday. She is always cranking out some new Paleo recipe and sending to me. She has seem some great benefits in her health and energy from following a grain free lifestyle. These cookies really reminded me of Pecan Sandies that I used to eat as a kid. They are not super sweet and great with coffee or tea.
My Grandma’s Low Carb Paleo Coconut Cookies
Ingredients:
1 cup softened butter or coconut oil
1/4 cup maple syrup or honey
OR 1 tsp stevia powder extract (for lower carb)
1 tsp vanilla, gluten free
3/4 cup coconut flour
1/4 cup almond flour
1 cup coconut shreds
1/2 tsp cinnamon
1 tsp baking soda
1/4 tsp sea salt
Directions:
Heat oven to 350 degrees.
Mix the wet ingredients in one bowl.
Mix the dry ingredients in another bowl.
Mix it all together thoroughly.
Scoop them into 1 inch balls and place on a cookie sheet covered with parchment paper.
Cook for 12-15 minutes until cooked through.
