These awesome gluten free, Paleo peppermint brownies are a hit in my house. I hope you like them too. They have a cool refreshing flavor and will be hoarded by chocolate lovers. But they are guilt free because they are full of healthy fat and can be made low carb too!
Paleo Peppermint Brownies
prep time: 10 minutes
cook time: 35 minutes
yield: 12 brownies
1 teaspoon vanilla extract (gluten-free)
3 large eggs, beaten
1 cup honey
1 teaspoon lemon juice
2 cups blanched almond flour
1 1/2 cups cocoa powder
1 teaspoon baking soda
1/2 teaspoon peppermint extract or peppermint vitality essential oil
Preheat the oven to 350°F and grease an 8-by-8-inch glass or ceramic baking dish. In a medium bowl, whisk together the melted fat, vanilla, eggs, honey, and lemon juice until well combined.
Mix the almond flour, cocoa, and baking soda in a small bowl. Add the dry mixture to the wet and stir until well combined. Stir in the peppermint extract and pour the mixture into the prepared baking dish.
Bake for 35 minutes, or until a knife inserted in the center comes out clean. Remove from the oven and cool in the baking dish for 30 minutes. Cut into squares, serve, and enjoy.
