I got inspired to make this pudding for my Dad so he would have a low carb treat over the Christmas Holiday. He is trying to get healthy and lose weight by doing Paleo with a more low carb version. He has been more focused on gluten free in the past and it is not really working because it is too high in carbohydrate. He has quite a bit to lose and his insulin resistance is a big challenge. He was happy to have this at then end of dinner when everyone else was eating my Primal Carrot Cake. This is perfect for people who are on a nutritional ketosis diet too.
Egg Nog Gelatin Pudding
Prep time: 1 hour
Cook time: 5 min
Serves: 4 (makes 4 1/2 cup servings)
1 cup water
1 Tbsp grass fed gelatin, rounded
1 13 oz can coconut milk (about 2 cups)
3/4 tsp stevia powder extract
(Or 2 Tbsp honey for a higher carb version)
1 tsp cinnamon
1 tsp nutmeg
Mix the water and gelatin together.
Pour the gelatin mixture into a saucepan with the the rest of the ingredients.
Heat the coconut mixture until it is hot then pour into pudding cups.
Refrigerate for one hour or until set.
Serve and enjoy.
