Recently I have been learning more about the ketogenic diet from my friend Kim Knoch, Freda Mooncotch and of course Jimmy Moore. They have all found healing and weight loss with this approach when they had tried many other things. I wrote a long post about it here. I also wrote about it in more detail here and here.
Gelatin is also very healing for the gut lining, skin, nails, hair. It helps detoxification and even reduces wrinkles and cellulite because it full of collagen. I like this one because it is from grass fed cows.
I am not saying this approach is for everyone by any means but it can be a tool for adults who may have had metabolic damage such as obesity and/or who have been on yo-yo diets for years. It has been used to help cancer in adults and for seizures with kids with doctor supervision, of course.
It is important to monitor your lab tests and work with a holistic knowledgeable practitioner. Of course listening to your own body is key and giving it an honest try as ketosis takes several weeks to get into. There are some reports that it is hard on the adrenals and thyroid but I think that is on an individual basis and the jury is still out. Of course always ask your doctor before trying a new diet or nutritional program.
This pudding is perfect for ketosis because it is low in carbs, high in fat and low in protein. Protein has to be moderate to maintain ketosis. Each tablespoon of this grass fed gelatin had 6 grams of protein, but a little goes a long way. Of course you can just add honey or maple syrup if you just want a Paleo version that is not so low carb.
I have a another version of this pudding here but this one is easier and a little more fluffy.
Easy Chocolate Gelatin Pudding
1 cup coconut milk (full fat, canned)
2 tbsp cacao powder or organic cocoa
1/2 tsp stevia powder extract
Or 2 Tbsp honey or maple syrup
1 Tbsp quality gelatin (I like this one)
2 Tbsp water
Add the coconut milk, cocoa, and sweetener to a pan over medium heat and stir with a whisk.
Mix the gelatin and water in small bowl.
Add the gelatin to the pan and stir until dissolved.
When the coconut milk mixture is warm transfer into two small ramekins or pudding cups.
Place in the fridge for 30-45 minutes (or freezer for faster setting).
Serve and enjoy!
