Easy Paleo No Bake Egg Free Toasted Coconut Macaroons
I have many Paleo readers who can not tolerate eggs, so I made this egg, gluten and grain free coconut macaroon recipe. I am always looking for ways to help them out and accommodate their egg sensitivity. Most readers know I am a big fan of gelatin because it is so good for bones, skin/nails and even for healing the gut lining. This recipe combines healthy fat from coconut with the healing benefits of gelatin to create a super no-bake macaroon cookie recipe.

Easy Egg Free Paleo Coconut Macaroon Recipe
Serves: 12-15 cookies
Prep time: 1 hour 15 minutes
Cook time: 7 min
3 cups shredded coconut
2 Tbsp grass fed gelatin (I used this one)
1/2 cup water
1 tsp orange zest
Preheat your oven to 300 and cover a cookie sheet with parchment paper.
Toast the coconut on a sheet pan for about 5 minutes or until golden brown.
Heat up 1/2 cup of water over medium heat in a sauce pan and stir in the gelatin until dissolved.
Mix the toasted coconut, gelatin mixture, sweetener and orange zest in a bowl until well combined.
Scoop the balls of coconut mixture on a cookie sheet in the shape of a mound.
Place the macaroon dough in the fridge to set for an hour.
Serve and enjoy.
