Savory Grain Free Herb Muffins

These muffins are great to go along with a dinner or a savory breakfast. I am huge fan of DFB (dinner for breakfast). These are a great way to have a muffin that won’t push you into a blood sugar roller coaster for the whole day. Top with plenty of grass fed butter to help burn fat and reduce inflammation. Eat with your favorite grass fed meat and a side of veggies for a full meal.

Ingredients:

1/2 cup full fat coconut canned milk

2 Tbsp coconut flour

Pastured eggs

1/2 tsp baking soda

2 Tsp of Herbs De Provence

Sea salt to taste

Directions:

Mix everything with a whisk in medium bowl

Put in unbleached muffin cups 2/3 full

Bake on 350 for 20-25 minutes

Makes about 6 muffins

Egg and Grain Free Blueberry Coffee Cake

My friend Mary has an egg allergy and I probably do too. I wanted to make a breakfast cake that was egg free but still tasty. Let me know what you think of it.

Ingredients:

6 Tbsp Chia seed
1 cup of water
1 cup sugar free organic applesauce
3-4 Tbsp honey or maple syrup to taste
0r 10-15 drops of liquid stevia
1/2 cup coconut oil, melted
1/2 cup coconut flour
1 cup blueberries
1 tsp baking soda
1/2 tsp sea salt

Directions:

Preheat oven to 350 degrees
Mix the chia with the water and the applesauce and let it sit for about 10 minutes until a gel forms.
Mix the dry ingredients in a large bowl.
Mix the melted coconut oil into the dry bowl.
Add the chia/applesauce gel to the dry bowl and mix well.
Add a little more applesauce if it seems too thick.
Add the blueberries and gently combine.
Pour the mixture into an 8×8 square or round baking dish.
Bake for 30-35 minutes until the middle is set.

Grain Free Mocha Coffee Cake Muffins

I love muffins, coffee, chocolate and cake…big surprise. So every now and then I make a Paleo friendly treat for my family (ok, just my husband, if there is any left for him, lol). I recently bought some cocoa powder and it made me come up with all kinds of ideas.

Some experts believe that cocoa and coffee can have cross reactive proteins that act the same as gluten in the body. Also caffeine in coffee and cocoa is enough to keep me up late if  I eat it in the afternoon or evening. Coffee and chocolate can be very addictive and seems to form a habit in me for sure.

Also if you have stressed and overworked adrenals coffee and chocolate can be an additional stressor. As long as you are aware of these issues and test yourself to see how these foods will affect you. These muffins are full of nutritious ingredients including healthy fats like coconut oil and proteins such as soy free eggs. Feel free to make them as sweet or as low carb as you see fit.

Coffeecakemuffins

Ingredients:

1/2 cup coconut flour
1/4 cup almond flour
1/2 cup coconut oil, melted
6 soy free pastured eggs
1/2 cup coconut sugar or honey
(or 1/2 cup xylitol for lower carb)
1 cup strong brewed coffee
1/4 tsp of baking soda
3 Tbsp organic cocoa powder
1/2 tsp nutmeg
1 tsp cinnamon

Directions:
Preheat the oven.
Mix the wet ingredients together in one bowl.
Mix the dry ingredients in another bowl.
Combine and whisk them all together well.
Put in muffin cups and bake for 30 minutes.

Grain Free Pumpkin Zucchini Bread Muffins

Ingredients:

1 cup Organic Pumpkin Puree

4 pastured soy free eggs

1/2 tsp of baking soda

1 tsp nutmeg

2 tsp cinnamon

1 tsp vanilla extract

1/2 cup coconut flour

1/4 cup melted Virgin Coconut Oil

1/2 cup chopped walnuts (optional)

2 medium shredded zucchinis

2 droppers full of Stevia Liquid or 2-4 Tbsp honey

1/4 tsp Real Salt

Before cooking

Directions:

Preheat oven to 350. Mix all the ingredients together thoroughly in a large mixing bowl. Fill Unbleached Baking Cups. Bake for about 40 minutes. Makes 12 muffins.

Grain Free Chocolate Pumpkin Muffins

I wanted to make a muffin that uses orange and black ingredients to remind me of Halloween. These are much healthier than candy even though they have a little maple syrup. This treat has antioxidants from the chocolate and pumpkin. Coconut oil is a miracle fat preferentially burned by the body as fuel and also melts belly fat.

 Ingredients:

1/2 cup coconut oil
Organic Soy-free Eggs
1 teaspoon vanilla extract
1/2 cup pumpkin puree or fresh baked pumpkin
1/2 cup Organic Maple Syrup or honey
6 oz Unsweetened Dark Chocolate (99% Cacao)
1/2 tsp Real Salt
1/2 cup coconut flour
1/4 tsp baking soda

Directions:

Preheat oven to 350. Mix the eggs and other wet ingredients in one bowl. Mix the dry ingredients together in another bowl. Make a double boiler (put a glass bowl over a pot of simmering water) and melt the chocolate and coconut oil together. Then let the chocolate cool off for 5 minutes. Add the chocolate, coconut oil, and wet ingredients then blend together with a whisk. Combine  the wet and dry mixture together until well blended. Get your muffin tins and place some Beyond Gourmet Unbleached Baking Cups in the  cups to keep the muffins from sticking.  Cook for 25 minutes or until firm.
